  2. Boil a large pot of salted water and cook the pasta according to package instructions until al dente. Drain and set aside.
  3. Sauté Aromatics:
  4. In a skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent (about 3–4 minutes). Add garlic and sauté for 30 seconds.
  5. Make Chipotle Sauce:
  6. Stir in the chopped chipotle peppers and adobo sauce. Cook for 1 minute, then add the tomato sauce. Let it simmer for 5 minutes.
  7. Add Cream:
  8. Lower the heat and stir in the cream. Cook for another 2–3 minutes, stirring constantly. Season with salt and pepper to taste.
  9. Combine Pasta:
  10. Toss the cooked pasta into the sauce until evenly coated. Let it cook together for 1–2 minutes so flavors meld.
  11. Garnish & Serve:
  12. Serve hot, topped with Parmesan and fresh herbs.
