  4. Taste and adjust seasoning with soy sauce or fish sauce if needed.
  5. In a separate pot, cook egg noodles according to package instructions. Drain and set aside.
  6. Prepare toppings: sauté garlic until golden brown; boil bok choy until just tender; prepare hard-boiled eggs.
  7. Assemble: In serving bowls, place cooked noodles, top with beef slices, bok choy, egg halves, and fried garlic. Pour hot broth over the top.
  8. Garnish with chopped green onions and serve hot with calamansi or lemon wedges.
