Squaw bread is a hearty, slightly sweet dark bread made with rye and whole wheat flours, molasses, and a hint of honey. Its soft texture and rich flavor make it perfect for sandwiches or a warm slice with butter.

  1. In a large bowl, combine warm water and yeast. Let sit for 5–10 minutes until foamy.
  2. Stir in molasses, honey, oil, and salt.
  3. Add whole wheat flour and rye flour. Mix well.
  4. Gradually add bread flour, ½ cup at a time, until a soft dough forms.
  5. Knead the dough for 8–10 minutes until smooth and elastic.
  6. Place in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled.
  7. Punch down the dough and shape into a loaf. Place on a greased or cornmeal-dusted baking sheet.
  8. Cover and let rise again for 30 minutes.
  9. Preheat oven to 375°F (190°C).
  10. Sprinkle oats on top (if using), and bake for 30–35 minutes until golden brown and sounds hollow when tapped.
  11. Cool before slicing.
