Turkish Delight (Lokum) is one of Turkey’s most famous sweets, loved worldwide for its chewy texture and delicate flavor. This pistachio-studded version balances floral rosewater with the crunch of roasted pistachios. Perfect with Turkish coffee or as a homemade gift.

  1. Lightly grease and line an 8x8 inch (20x20 cm) pan with parchment paper.
  2. In a medium saucepan, combine sugar, 1 ½ cups water, and lemon juice. Bring to a boil over medium heat. Cook until the syrup reaches 240°F (115°C) (soft ball stage).
  3. In a separate large saucepan, whisk together cornstarch, cream of tartar, and 2 cups water. Cook over medium heat until thick and smooth.
  4. Gradually pour the hot sugar syrup into the cornstarch mixture, stirring constantly. Reduce heat to low and simmer for 45–50 minutes, stirring often, until very thick and golden.
  5. Stir in rosewater and pistachios. Mix until evenly combined.
  6. Pour mixture into prepared pan, smooth the top, and let set at room temperature overnight.
  7. Once firm, dust a cutting board with powdered sugar mixed with cornstarch. Invert the block, remove paper, and cut into bite-sized cubes with an oiled knife.
  8. Roll pieces in the sugar-cornstarch mixture to prevent sticking.
