Season pork chops with salt and pepper on both sides.
Heat butter and oil in a skillet over medium-high heat. Brown pork chops for 2–3 minutes per side, then transfer to a baking dish.
In the same skillet, sauté onions and mushrooms until softened. Add garlic and cook for another minute.
Stir in chicken broth and bring to a simmer, scraping the browned bits from the pan.
Remove from heat and stir in sour cream and cream of mushroom soup until smooth.
Pour sauce over pork chops in the baking dish.
Cover with foil and bake for 45–50 minutes, or until pork chops are tender.
Garnish with fresh parsley before serving.
