  4. Gradually whisk in milk, then add heavy cream and white wine. Cook until thickened.
  5. Stir in Dijon mustard, salt, pepper, and seafood seasoning (Old Bay). Remove from heat.
  6. Fold in cheese until melted, then pour sauce over seafood.
  7. Crush butter crackers (or use panko), toss with melted butter, and sprinkle evenly over casserole.
  8. Bake uncovered for 30-40 minutes until bubbly and golden brown. Serve hot, garnished with fresh herbs.
