Heat olive oil in a large pot. Add chopped onions and sauté until soft.
Stir in garlic and cook for 1 minute until fragrant.
Add tomato paste and stir well, letting it caramelize for 2–3 minutes.
Add diced tomatoes, water (or broth), cumin, coriander, paprika, and salt. Simmer for 10 minutes.
Stir in the cooked lima beans and let simmer for 20–25 minutes until the sauce thickens and flavors meld.
Adjust seasoning with salt, pepper, and lemon juice.
Garnish with fresh parsley and serve hot with rice or pita.
