Preheat oven to 350°F (175°C).
In a medium saucepan, combine goumi berries, honey/maple syrup, and lemon juice. Heat over medium for 5–6 minutes until berries soften.
In a small bowl, whisk cornstarch with 2 tbsp water, then stir into berry mixture. Simmer until slightly thickened (2–3 minutes). Remove from heat.
Place the crust in a 9-inch pie pan and pour in the berry filling.
Optional: Top with a second crust or a sprinkle of oat crumble for texture.
