This light and wholesome goumi pie is a fresh twist on a classic fruit dessert — naturally sweet, slightly tangy, and loaded with antioxidants. Perfect for spring and summer, it’s easy enough for a weeknight treat but pretty enough for guests.

  1. Preheat oven to 350°F (175°C).
  2. In a medium saucepan, combine goumi berries, honey/maple syrup, and lemon juice. Heat over medium for 5–6 minutes until berries soften.
  3. In a small bowl, whisk cornstarch with 2 tbsp water, then stir into berry mixture. Simmer until slightly thickened (2–3 minutes). Remove from heat.
  4. Place the crust in a 9-inch pie pan and pour in the berry filling.
  5. Optional: Top with a second crust or a sprinkle of oat crumble for texture.
  6. Bake for 25–30 minutes, until crust is golden.
  7. Cool for at least 15 minutes before slicing.
