  1. Heat oil in a large skillet over medium heat. Sauté garlic and onion until soft and fragrant (5-6 minutes). Add bell pepper and cook until softened.
  2. Add chopped tomatoes; cook until they break down and form a sauce. Add a little water if needed.
  3. Stir in rice, smoked paprika, chili powder, salt, and pepper. Add vegetable stock and frozen peas. Bring to a boil, then reduce heat to low, cover, and simmer 12-15 minutes until rice is tender and liquid absorbed.
  4. Add prawns during the last 5 minutes of cooking, folding gently until cooked through and pink.
  5. Remove from heat and let rest 5 minutes. Garnish with fresh basil and lemon slices before serving.
