  1. Toss shrimp in buttermilk and let sit for 10 minutes to tenderize.
  2. In a shallow dish, mix cornstarch, salt, garlic powder, and pepper. Dredge shrimp in the mixture, coating both sides.
  3. Heat oil in a skillet to about 350°F (175°C). Fry shrimp in batches for about 1.5 minutes per side until golden and crispy. Do not overcrowd the pan. Drain on paper towels.
  4. Combine mayonnaise and sweet chili sauce (and sriracha if using) to make the bang bang sauce.
  5. Toss the fried shrimp in the sauce until well coated.
  6. Garnish with chopped green onions and serve immediately.
