This baked quinoa dish is a nourishing blend of protein-rich quinoa, vibrant spinach, and melty cheese. It’s a great meatless main or a hearty side dish that’s simple to prepare and perfect for meal prep.

- Preheat oven to 375°F (190°C). Grease a medium baking dish.
- Cook quinoa in broth or water according to package instructions. Let cool slightly.
- In a skillet, heat olive oil and sauté onion and garlic until soft. Add spinach and cook until wilted.
- In a large bowl, combine cooked quinoa, spinach mixture, eggs, mozzarella, Parmesan, oregano, salt, and pepper. Mix well.
- Transfer mixture to prepared baking dish. Sprinkle extra cheese on top if desired.
- Bake uncovered for 25–30 minutes, until golden and set.
- Let it rest for a few minutes before slicing and serving.
