This baked quinoa dish is a nourishing blend of protein-rich quinoa, vibrant spinach, and melty cheese. It’s a great meatless main or a hearty side dish that’s simple to prepare and perfect for meal prep.

  1. Preheat oven to 375°F (190°C). Grease a medium baking dish.
  2. Cook quinoa in broth or water according to package instructions. Let cool slightly.
  3. In a skillet, heat olive oil and sauté onion and garlic until soft. Add spinach and cook until wilted.
  4. In a large bowl, combine cooked quinoa, spinach mixture, eggs, mozzarella, Parmesan, oregano, salt, and pepper. Mix well.
  5. Transfer mixture to prepared baking dish. Sprinkle extra cheese on top if desired.
  6. Bake uncovered for 25–30 minutes, until golden and set.
  7. Let it rest for a few minutes before slicing and serving.
