Preheat oven to 375°F (190°C).
In a skillet, melt butter and sauté shallots and garlic until fragrant.
Stir in flour to make a roux; cook for 1–2 minutes.
Slowly add the seafood stock and bring to a simmer until thickened.
Stir in heavy cream, white wine, and seasonings. Simmer 3–4 minutes.
Fold in seafood and remove from heat.
